Ingredients:
- 12 eggs
- 1/2 c. coconut oil or ghee, melted
- 1 c. pumpkin puree or other squash puree
- Stevia or other sweetener
- 3 tsp. cinnamon
- 1 1/2 tsp. ginger
- 1/2 tsp. salt
- 1 c. coconut flour
Preheat oven to 400 degrees. Mix dry ingredients and set aside. Beat eggs and add other wet ingredients. Combine and whisk until lumps are gone. Scoop into muffin tins and bake 15-20 minutes.
