Kids can have fun creating their own recipes for healthy, nourishing foods! Join 12-year-old Colin Fabry as he demonstrates his recipe for chocolate avocado ice cream—a nutritious and delicious dairy-free/sugar-free treat you and your kids will love!

Colin's Special Recipe

  • 1 large avocado
  • 1/2 c. cacao powder
  • Vanilla liquid stevia to taste

Type 1 diabetes dosing information: There are approx. 25 carbs in the cacao powder and approx. 15 carbs in the avocado. With the high fat content of this dessert/snack, Colin doses 2 units at a carb ratio of 20 carbs for each unit of insulin.

This works well as a bedtime snack. It holds Colin's blood sugar well.

Erin's Original Recipe

  • 3 avocados
  • 3 tbsp. cacao powder (or enough to get a nice chocolate color)
  • 2 tsp. cinnamon
  • Pinch of sea salt
  • Chocolate liquid stevia to taste

Directions:

Blend all ingredients in high-powered blender or food processor until creamy. Chill in freezer and store until needed. (It takes some time to thaw, unlike regular ice cream.) Garnish with coconut shavings and/or cacao nibs. Serve and enjoy!
