A sweet but healthy treat that you and your kids can enjoy as a snack or dessert! Erin Fabry demonstrates this simple, delicious recipe for Sweet Carrot Fries.
- 4-10 carrots, sliced into fries
- Oil of choice (expeller-pressed coconut or palm oil recommended)
- Spices (nutmeg, cloves, cinnamon)
- Stevia or sweetener of choice
Preheat oven to 350-400 degrees. Cover a pan or cookie sheet with oil and spread carrot fries out so each has some space to cook. Sprinkle on spices of choice and place in the oven for 15-20 minutes. When carrots are beginning to brown, take out the pan and place fries on plate. Sprinkle stevia or sweetener of choice on top, serve, and enjoy! (Recommended: add a bit of extra virgin olive oil on fries after they are placed onto a plate. They will taste like funnel cakes!)
